Servings:

*** This recipe is not vegetarian and not gluten free ***
Necessities:
- 3 ripe bananas
- 3 eggs
- 14g Verum Cocoa Energize
- 100 g almond flour
- 150 g flour
- 1 tsp baking powder
- 1 tsp baking soda
- 5 sheets of gelatin
- 400 g low-fat cottage cheese
- 2 tsp vanilla aroma
- 40 g vanilla protein powder (optional)
Roadmap:
-
Preheat the oven to 180 degrees (top and bottom heat).
-
Mash the bananas and add the eggs one at a time until fully incorporated.
-
Mix the Verum Cacao Energizer with two tablespoons of boiling water and stir into a paste. Add this to the bananas and mix.
-
In another bowl, mix the almond flour, flour, baking powder and baking soda with a pinch of salt. Add the dry and wet ingredients together and mix until smooth.
-
Grease or line a baking tin with baking paper and pour in the batter evenly. Bake within 45-55 minutes until done and golden brown. A skewer should come out clean..
-
Meanwhile, soak the gelatin in water for five minutes and then dissolve it in hot milk. Let this cool.
-
Stir the cooled gelatin through the quark together with the vanilla aroma and optionally the protein powder. Put in the fridge.
-
Cut the banana bread into three pieces once it has cooled. Spread the quark mixture on the bottom and place another piece of banana bread on top. Finish it off nicely by spreading the quark over the sides as well.
- Place in the fridge for at least 2 hours to set. Finish with cocoa powder before serving.
Mmmm, have fun!
